- Preheat oven to 350°F (175°C). Spread walnuts on a baking sheet and toast for 5-7 minutes, or until fragrant and lightly browned. Let cool completely.
- In a small bowl, whisk together apple cider vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper until well combined.
- In a large bowl, combine mixed greens, diced apples, cranberries, and toasted walnuts.
- If using, sprinkle crumbled blue cheese over the salad.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve immediately and enjoy!
Notes
For a sweeter dressing, add a touch more maple syrup. You can also add other nuts like pecans or pecans, or dried fruits like raisins or cherries. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. It's best to add the dressing just before serving to prevent the greens from wilting.
