  • 2 Large ripe tomatoes sliced about 1/4 inch thick
  • 8 ounces Fresh mozzarella sliced about 1/4 inch thick (fresh buffalo mozzarella recommended)
  • 1 cup Fresh basil leaves packed
  • 1/2 cup Balsamic vinegar
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Freshly ground black pepper or to taste
  • 1/4 cup Optional: Freshly grated Parmesan cheese for extra flavor

Method
 

Instructions
  1. Prepare the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and olive oil. Bring to a simmer over medium heat.
  2. Reduce heat to low and simmer gently for 10-15 minutes, or until the mixture has thickened slightly and reduced in volume by about half. Stir occasionally to prevent burning.
  3. Remove from heat and set aside to cool slightly.
  4. Assemble the Salad: Arrange alternating slices of tomato and mozzarella on a large plate or platter.
  5. Tuck fresh basil leaves between the slices of tomato and mozzarella.
  6. Season with salt and freshly ground black pepper. If using, sprinkle with Parmesan cheese.
  7. Drizzle the balsamic glaze evenly over the salad.
  8. Serve immediately and enjoy!

Notes

For a richer flavor, use high-quality balsamic vinegar. You can also add other ingredients such as cherry tomatoes, roasted red peppers, or artichoke hearts.
