- Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Make the crust: Combine graham cracker crumbs, sugar, and cinnamon. Stir in melted butter until moist. Press into the pan bottom and bake for 8-10 minutes, or until lightly golden. Cool completely.
- Make the filling: Beat cream cheese and sugar until smooth. Beat in heavy cream and vanilla. Add eggs one at a time, mixing well. In a separate bowl, whisk together flour, salt, chocolate chips, and cinnamon.
- Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined. Do not overmix.
- Pour batter over the cooled crust.
- Bake: Place the springform pan in a larger roasting pan. Pour hot water halfway up the sides. Bake for 50-60 minutes, or until set around the edges but slightly jiggly in the center.
- Turn off the oven; let cool with the door ajar for 1 hour. Cool completely on a wire rack, then refrigerate for at least 4 hours, or preferably overnight.
- Make the topping: Combine sugar and cinnamon. Sprinkle over the chilled cheesecake.
- Slice and serve.
Notes
For a stronger churro flavor, you can add a teaspoon of churro spice blend to the crust and filling. Allow the cheesecake to come to room temperature slightly before serving for optimal texture.
