  • 1 pound Rotini Pasta
  • 1 large head Broccoli Florets about 1 pound
  • 1/2 cup Mayonnaise
  • 1/4 cup Red Wine Vinegar
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Shredded Cheddar Cheese
  • 1/4 cup Chopped Red Onion
  • 1/4 cup Chopped Celery optional

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, steam or blanch broccoli florets until tender-crisp (3-5 minutes). Drain well and rinse with cold water. Cool slightly.
  3. In a large bowl, whisk together mayonnaise, red wine vinegar, sugar, salt, and pepper.
  4. Add cooked pasta, broccoli, cheddar cheese, and red onion (and celery if using) to the bowl.
  5. Gently toss everything until well combined and the pasta is evenly coated.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld. Taste even better the next day!

Notes

For a richer flavor, use a combination of cheeses. You can also add other vegetables like bell peppers or carrots. If you like a sweeter salad, increase the sugar to 3 tablespoons.
