- Cook pasta according to package directions. Drain and rinse with cold water.
- While pasta cooks, steam or blanch broccoli florets until tender-crisp (3-5 minutes). Drain well and rinse with cold water. Cool slightly.
- In a large bowl, whisk together mayonnaise, red wine vinegar, sugar, salt, and pepper.
- Add cooked pasta, broccoli, cheddar cheese, and red onion (and celery if using) to the bowl.
- Gently toss everything until well combined and the pasta is evenly coated.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld. Taste even better the next day!
Notes
For a richer flavor, use a combination of cheeses. You can also add other vegetables like bell peppers or carrots. If you like a sweeter salad, increase the sugar to 3 tablespoons.
