- In a medium-sized bowl, combine the shredded cheddar cheese and softened cream cheese. Mix well until just combined. Avoid overmixing, as this can make the pimento cheese too soft.
- Add the drained and chopped pimentos, mayonnaise, milk (or buttermilk), yellow mustard, Worcestershire sauce, garlic powder, and cayenne pepper (if using).
- Gently stir all ingredients together until thoroughly combined and creamy. Be careful not to overmix.
- Season with salt and freshly ground black pepper to taste. Start with a small amount and add more as needed, depending on the saltiness of your cheese.
- Taste and adjust seasonings as needed. You may want to add more mayonnaise for a creamier texture, or more mustard or Worcestershire sauce for extra flavor.
- Serve immediately, or cover and refrigerate for later. The flavors will meld nicely if you let it chill for at least 30 minutes before serving.
Notes
For a spicier pimento cheese, add more cayenne pepper. Consider adding a tablespoon of finely chopped red onion for extra bite and flavor. This pimento cheese is delicious served with crackers, baguette slices, celery sticks, or in sandwiches.
