  • 16 ounces Sharp Cheddar Cheese shredded
  • 8 ounces Cream Cheese softened
  • 4 ounces Pimentos jar, drained and chopped
  • 0.25 cup Mayonnaise
  • 2 tablespoons Milk or Buttermilk
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Garlic Powder
  • 0.25 teaspoon Cayenne Pepper optional
  • to taste Salt and Freshly Ground Black Pepper

Instructions
  1. In a medium-sized bowl, combine the shredded cheddar cheese and softened cream cheese. Mix well until just combined. Avoid overmixing, as this can make the pimento cheese too soft.
  2. Add the drained and chopped pimentos, mayonnaise, milk (or buttermilk), yellow mustard, Worcestershire sauce, garlic powder, and cayenne pepper (if using).
  3. Gently stir all ingredients together until thoroughly combined and creamy. Be careful not to overmix.
  4. Season with salt and freshly ground black pepper to taste. Start with a small amount and add more as needed, depending on the saltiness of your cheese.
  5. Taste and adjust seasonings as needed. You may want to add more mayonnaise for a creamier texture, or more mustard or Worcestershire sauce for extra flavor.
  6. Serve immediately, or cover and refrigerate for later. The flavors will meld nicely if you let it chill for at least 30 minutes before serving.

Notes

For a spicier pimento cheese, add more cayenne pepper. Consider adding a tablespoon of finely chopped red onion for extra bite and flavor. This pimento cheese is delicious served with crackers, baguette slices, celery sticks, or in sandwiches.
