CRISPY HONEY BALSAMIC ROASTED BRUSSELS SPROUTS

Ingredients
  

For the Brussels Sprouts
  • 1.5 pounds Brussels Sprouts, trimmed and halved
  • 3 tablespoons Olive Oil, divided Use 2 tbsp for roasting, 1 tbsp for the glaze
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
For the Honey Balsamic Glaze
  • 3 tablespoons Balsamic Vinegar Good quality recommended
  • 2 tablespoons Honey
  • 2 cloves Garlic, minced

Method
 

STEP 1: PREPARE AND PREHEAT
  1. Preheat your oven to 400°F (200°C). Line a large, sturdy baking sheet with parchment paper for easy cleanup, or ensure the baking sheet is non-stick.
  2. Thoroughly wash and dry the Brussels sprouts. Trim off the hard ends and remove any loose or yellowed outer leaves. Cut all of the sprouts lengthwise down the middle.
STEP 2: SEASON AND ROAST
  1. In a large mixing bowl, combine the halved Brussels sprouts with 2 tablespoons of the olive oil, the kosher salt, and the black pepper. Toss vigorously until the sprouts are evenly coated with the oil and seasoning.
  2. Spread the seasoned Brussels sprouts in a single layer on the prepared baking sheet. Ensure the sprouts are cut-side down, as this encourages deep caramelization and crispiness. Do not overcrowd the pan; use two pans if necessary to maintain a single layer.
  3. Place the baking sheet into the preheated oven and roast for 20 to 25 minutes. The sprouts should be fork-tender and beginning to brown and crisp around the edges.
STEP 3: PREPARE THE GLAZE
  1. While the Brussels sprouts are roasting, prepare the honey balsamic glaze in a small bowl. Combine the remaining 1 tablespoon of olive oil, the 3 tablespoons of balsamic vinegar, the 2 tablespoons of honey, and the 2 cloves of minced garlic. Whisk the ingredients together until they are fully incorporated and the mixture is smooth. Set the glaze aside.
STEP 4: GLAZE AND FINISH ROASTING
  1. After the initial 20 to 25 minutes of roasting, carefully remove the baking sheet from the oven.
  2. Pour the prepared honey balsamic glaze evenly over the roasted sprouts. Toss the sprouts directly on the baking sheet using a spatula or tongs until every piece is coated in the sticky glaze mixture.
  3. Return the glazed Brussels sprouts to the oven. Continue roasting for an additional 5 to 8 minutes, or until the glaze has thickened slightly and caramelized, but not burned. Keep a close eye on the sprouts during this final stage, as the honey can burn quickly.
STEP 5: SERVE
  1. Remove the finished Crispy Honey Balsamic Roasted Brussels Sprouts from the oven.
  2. Transfer the hot sprouts immediately to a serving dish. Taste and add a final small pinch of salt, if desired.
  3. Serve the Brussels sprouts immediately while they are hot and crispy.

Notes

For extra crunch, consider adding a sprinkle of toasted pecans or walnuts right before serving. If you prefer a thicker glaze, you can briefly reduce the balsamic mixture in a small saucepan over medium heat before adding the honey and oil.
