  • 1 cup (2 sticks) Unsalted Butter softened
  • 1.5 cups Granulated Sugar
  • 2 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsweetened Cocoa Powder
  • Optional Coarse Sugar For sprinkling

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy using an electric mixer.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a medium bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop by rounded tablespoons onto the prepared baking sheets, leaving about 2 inches between each cookie. Sprinkle with coarse sugar, if desired.
  7. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.

Notes

For extra gooey cookies, slightly underbake. Store in an airtight container at room temperature for up to 3 days.
