  • 1 cup Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Almond Extract

  • 1/2 teaspoon Salt
  • 1 cup Marzipan finely chopped
  • Optional Powdered Sugar for dusting

Method
 

Instructions
  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Cream together softened butter and sugar until light and fluffy using an electric mixer.
  3. Beat in eggs one at a time, then stir in almond extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in chopped marzipan until evenly distributed.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, leaving about 2 inches between cookies.
  8. Bake for 10-12 minutes, or until edges are lightly golden brown.
  9. Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  10. Dust with powdered sugar, if desired.

Notes

For a richer flavor, use almond flour in place of a portion of the all-purpose flour. You can also add chopped nuts or dried cranberries to the dough for added texture and flavor.
