  • 0.25 cup Lime Juice
  • 2 tablespoons Sugar (or to taste)
  • 0.25 teaspoon Salt (or to taste)
  • 2 Fresh Lime Wedges for garnish

Instructions
  1. In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), and cilantro.
  2. In a small bowl, whisk together the lime juice, sugar, and salt until the sugar is completely dissolved.
  3. Pour the lime juice mixture over the peach mixture and stir gently to combine. Be careful not to overmix; you want to keep the peaches relatively intact.
  4. Taste and adjust seasonings as needed. Add more sugar for sweetness, lime juice for tartness, salt for saltiness, or jalapeño for heat.
  5. Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional but recommended for best results. The flavors will deepen and blend.
  6. Garnish with fresh lime wedges before serving.
  7. Serve immediately with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.

Notes

For a smoother salsa, you can pulse the ingredients briefly in a food processor. If you don't have fresh cilantro, you can substitute with 1 tablespoon of dried cilantro. Store leftover salsa in an airtight container in the refrigerator for up to 3 days.
