- In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), and cilantro.
- In a small bowl, whisk together the lime juice, sugar, and salt until the sugar is completely dissolved.
- Pour the lime juice mixture over the peach mixture and stir gently to combine. Be careful not to overmix; you want to keep the peaches relatively intact.
- Taste and adjust seasonings as needed. Add more sugar for sweetness, lime juice for tartness, salt for saltiness, or jalapeño for heat.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional but recommended for best results. The flavors will deepen and blend.
- Garnish with fresh lime wedges before serving.
- Serve immediately with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.
Notes
For a smoother salsa, you can pulse the ingredients briefly in a food processor. If you don't have fresh cilantro, you can substitute with 1 tablespoon of dried cilantro. Store leftover salsa in an airtight container in the refrigerator for up to 3 days.
