- Preheat oven to 400°F (200°C). Toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a large baking sheet.
- In a large skillet over medium-high heat, heat remaining olive oil. Add beef cubes and sear on all sides until browned, about 3-4 minutes per side. Remove beef from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and thyme; cook for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
- Add the seared beef cubes to the skillet with the garlic butter. Toss to coat.
- Transfer the beef to the baking sheet with the potatoes.
- Bake for 20-25 minutes, or until the potatoes are tender and the beef is cooked to your desired internal temperature (use a meat thermometer). Internal temperature should reach at least 145°F (63°C) for medium-rare beef.
- Stir in chopped parsley before serving.
Notes
For extra flavor, marinate the beef cubes in a mixture of garlic, thyme, salt, and pepper for at least 30 minutes before cooking. You can also add other vegetables to the baking sheet, such as broccoli florets or carrots.
