  • 1 12 ounce can Full-fat Coconut Milk (refrigerated overnight)
  • 1/2 cup Pumpkin Puree (not pumpkin pie filling)
  • 1/4 cup Maple Syrup or to taste
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Ginger
  • Pinch Ground Cloves
  • Pinch Salt

Method
 

Instructions
  1. Refrigerate a can of full-fat coconut milk overnight.
  2. Scoop out the thick, solidified coconut cream from the top of the can, leaving the watery liquid behind. You should have approximately 1 cup of coconut cream. If not, add more coconut cream or heavy cream to reach 1 cup.
  3. In a blender, combine the coconut cream, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, ginger, cloves, and salt.
  4. Blend until completely smooth and creamy.
  5. Taste and adjust sweetness by adding more maple syrup if needed.
  6. Pour into an airtight container and refrigerate for at least 2 hours to allow flavors to meld and the creamer to thicken.
  7. Enjoy your homemade pumpkin spice creamer in your coffee, tea, or other favorite hot beverage!

Notes

This creamer will keep in the refrigerator for up to 1 week. For a richer flavor, use full-fat coconut milk. You can also adjust the spices to your liking. A dash of nutmeg would be delicious!
