Pecan Pie Filling
  • 1.5 cups Pecan halves
  • 1 cup Granulated sugar
  • 0.5 cup Packed light brown sugar
  • 0.25 cup All-purpose flour
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.33 cup Unsalted butter, melted (⅔ stick)
  • 2 Large eggs
  • 0.5 cup Corn syrup
Cobbler Topping
  • 1.5 cups All-purpose flour
  • 0.5 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, cold (1 stick), cut into cubes
  • 0.5 cup Buttermilk

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
  2. In a large bowl, combine pecans, granulated sugar, brown sugar, flour, and salt. Stir in vanilla extract and melted butter.
  3. Whisk in eggs and corn syrup until well combined. Pour mixture into the prepared baking dish.
  4. In a separate large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  5. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.
  6. Drop spoonfuls of the cobbler topping evenly over the pecan filling.
  7. Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool slightly before serving. Enjoy warm!

Notes

For a richer flavor, toast the pecans before adding them to the filling. You can also substitute other nuts, such as walnuts or pecans, for some of the pecans. Serve with a scoop of vanilla ice cream or whipped cream for an extra decadent treat.
