- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
- In a large bowl, combine pecans, granulated sugar, brown sugar, flour, and salt. Stir in vanilla extract and melted butter.
- Whisk in eggs and corn syrup until well combined. Pour mixture into the prepared baking dish.
- In a separate large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.
- Drop spoonfuls of the cobbler topping evenly over the pecan filling.
- Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving. Enjoy warm!
Notes
For a richer flavor, toast the pecans before adding them to the filling. You can also substitute other nuts, such as walnuts or pecans, for some of the pecans. Serve with a scoop of vanilla ice cream or whipped cream for an extra decadent treat.
