  1. Melt chocolate: In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring until smooth. Alternatively, use a double boiler.
  2. Combine wet ingredients: In a separate bowl, combine melted chocolate, peanut butter, softened butter, and powdered sugar (1/2 cup). Mix until smooth and creamy. Stir in vanilla extract if using.
  3. Add cereal: Gently fold in the Chex cereal until evenly coated.
  4. Chill: Cover the bowl and refrigerate for at least 30 minutes, or until firm enough to handle.
  5. Roll into balls: Roll the chilled mixture into 1-inch balls. Line a baking sheet with parchment paper for easy cleanup.
  6. Coat in powdered sugar: Place the remaining powdered sugar (1 cup) in a shallow bowl. Roll each truffle ball in the powdered sugar until completely coated.
  7. Enjoy! Serve immediately or store in an airtight container in the refrigerator for up to a week.

Notes

For a richer flavor, use dark chocolate chips. You can also add sprinkles or chopped nuts to the powdered sugar coating for extra flair. Experiment with different Chex cereal varieties for unique flavor combinations!
