- Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Make the crust: Combine flour, baking powder, and salt. Cream together butter and sugar until light and fluffy. Beat in egg yolk and vanilla. Gradually add dry ingredients to wet ingredients, mixing until just combined. Press into the pan and bake for 12-15 minutes, or until lightly golden. Cool completely.
- Preheat oven to 325°F (165°C). Beat cream cheese and sugar until smooth. Beat in flour, salt, and vanilla. Add eggs one at a time, mixing well. Stir in sour cream.
- Pour filling over cooled crust.
- Place springform pan in a larger roasting pan. Pour boiling water halfway up the sides of the springform pan. Bake for 50-60 minutes, or until set around the edges but slightly jiggly in the center.
- Turn off oven; cool in oven with door ajar for 1 hour. Cool completely on a wire rack, then refrigerate for at least 4 hours, or preferably overnight, before serving.
Notes
For a richer flavor, use full-fat cream cheese and sour cream. You can garnish with fresh berries or a dusting of powdered sugar before serving.
